For reals, this duo is like the new A-list couple. Except instead of being featured all over E! it’s my camera’s memory card that’s reached capacity. Brangelina can suck it, this pair has beauty and brains. Well, not really, but whatever.
For the past week, I’ve been eating avocado and eggs in every form I can imagine. This sandwich was one I created a few weeks ago and it just keeps coming back. That’s how you know when a recipe is a real winner.
- hard boiled eggs
- honey mustard
- dijon mustard
- butternut squash puree
Spread on toast. The other slice gets the avocado.
Don’t be afraid to be generous. Then sprinkle with salt and lime juice.
Then put them together.
Much better than anything you will find on E!
That looks like a dream come true!!! I might have to eat that for dinner tonight.
mmmmmm!
ok egg and avocado sounded good enough, but then you added HONEY MUSTARD to it? Brilliant.
I’ve never tried eggs with avocado before. This sounds and looks delicious 🙂
okay, that looks pretty much amazing. I’ve been having your avocado sandwiches on my brain for a while now! I went to get some avo at Trader Joe’s but they were out!!!
oooo!!! this looks sooo good!!! now that I can have avos back in my life, I’m making this IMMEDIATELY!!!
are you using Udi’s or is this loaf homemade?
You’re so cute 😉 I’m not a mustard fan but I would try this with traditional egg salad and avo for sure!
I am SO making this this week!! Looks delicious.
Um, I’ll take this over stupid Brad and Angelina any day! Love the vibrant colors–the squash really makes the egg “pop” ha! 🙂
Definitely love this!! Looks like a tasty brunch sandwich!
holy crap those eggs look good.
this is udis. so pricey but so good.
Why do you still talk about being vegan on your blog when you eat eggs?
BEAUTIFUL!! I’d rather see that couple around than Brangelina any day! Those eggs look mouth-watering!
