Earth Day!

Happy Earth Day!!  Did everyone do something nice and green today? 

I contacted my hospital’s big-wigs to beg ask about an initiative promoting biking to work (and requesting to get a small protected room to store the staff hippies’ bikes).  C’mon Beth Israel, get green!!  This is something I have been trying to get going for a while, so now that the weather is getting nice, and in honor of Earth Day, I figured an extra push may be well received.  We’ll see…

Step 1: place cubed tofu in pan           Step 2: toss in spinach

Step 6: plate whatever is leftover after you’ve scorched the roof of your mouth because of your lack of patience…and ENJOY!

Needed the crunch factor, too.  An apple a day, right?

Later in the afternoon, my tummy started growling, so I decided on some toast with plain greek yogurt.  I know this sounds weird, but I think I’m onto something here!!  Chobani can do no wrong.

Has anyone tried Tofutti’s “better than cream cheese”?  I kinda wanna try it, but it’s one of those products I always end up passing on while at the grocery store (in the interest of preserving my wallet/bank account).  I’d imagine it could be good on toast like my above invention.  Opinions?

I really wasn’t feeling the exercising today, so I opted for lots of mat work (arms, abs, stretching, etc.)…I’m supposed to be tapering for the half marathon this weekend anyways, so I don’t feel too guilty.

Post-gym I refueled gobbled down some perfectly crunchy carrots with my one-and-only lover SABRA.  Chunky!!  I don’t know how or why, but chunky is WAY better than smooth…plus the containers are double the size.  How can I resist?!?

We now interrupt this post with a super important topic…

Non-milk discussion

I need help.  I am getting nervous about my soymilk consumption and looking to switch things up a bit.  Gotta keep that estrogen intake in check.  Plus I know other bloggers out there are fans of a wide variety of non-milk milks.  So what are my alternatives?

  • hemp milk
  • almond milk
  • rice milk
  • cashew milk

Who has tried these and what are your opinions? Also, if you don’t like nuts, do the almond/cashew choices taste anything like nuts?  I think they are from a non-nut part of the plant, but I’ll admit, I haven’t done my research…hey, that’s what you guys are for!

Any others I’m missing?  Also, unsweetened vs. sweetened?  Any tips would be greatly appreciated!!!

Ok, back to the good stuff.  DINNER.

Salad challenge.  Hummbecue – because 25 servings of hummus a day just ISN’T enough for the growing girl   🙂

I practically DUMPED my tofu in BBQ sauce and SABRA hummus, plus onions, and red bell peppers…although the BBQ sauce seems to be the dominant ingred by the looks of the photo.  There’s also half an avocado in there somewhere…

Dessert was quite a treat.

    My favorite non-milk is almond milk. We just tried rice milk and it’s all right but it’s just not as good as my lovely almond milk. We get unsweetened and at first it was kinda “blah” and I added some Truvia to the container but now I love it just as is.

    1. Tofutti cream cheese is good. BUT, I can never finish the whole container (unless I’m using it in a recipe) so I never buy it anymore.
    2. I like rice milk in cereal and now in my protein shakes because it’s light and doesn’t have much taste – kind of like skim milk. Nut milk in my oatmeal and sometimes baking, and soy milk in my fancy coffees and when I cook because it’s heavier. Nut milk tastes like nuts to me so I don’t use it that often.

    And so does the tofu scramble! I can’t get enough!

    Ok, so I too like to monitor the amount of soy milk I have in a day….so I’ll usually have a serving of soy milk and then if I need more milk with something else I usually have a carton of almond milk or hemp milk handy! I just tried vanilla hemp milk this past week and I loveeeee it! It’s kinda thick, and it has more protein in it than almond milk!

    Unsweetened is fine, but if you want to taste something YUMMY….i’d go for the sweetened varieties!

    I’ve tried a number of non-milks.

    I’ll just list a bunch I’ve either bought from the store or made myself:

    Rice milk
    Almond milk
    Oat milk
    Hemp milk
    Coconut milk
    Sesame milk [Very cool taste]
    Macadamia milk [omg, so rich]
    Brazil nut milk [AWESOME]

    🙂 There are loads of choices.

    Living harvest brand hemp milk or that new so delicious brand coconut milk! So so good.

    I like almond milk the best out of those. Rice milk is too watery for my tastes – reminds me of fat free cow’s milk. I like nuts so my opinion is biased – almond milk has a slight nutty flavor but it isn’t offensive. I do like hemp milk but I’m not a fan of the price.

    I have never seen chunky sabra before! I am in love with smooth so I don’t think I could cheat on it, though.

    I HATE nuts, but wish I liked them because I know they are healthy. I use almond milk, and I LOVE it! It tastes nothing like almonds, and is really good. I use Blue Diamond Almond Breeze–plain for cooking, and unsweetened vanilla for coffee, baking, etc. So good! They have both “normal” (i.e. sweetened) and unsweetened options. If you use sweetened soy milk currently, I would say start with the sweetened almond milk (or whatever milk you decide to try) so that is is somewhat comparable.

    i do unsweetened almond milk, or vanilla- just because it’s super low cal but i LOVE milk and cereal so it’s good for a snack! Soy milk to drink though, with cookies 😀

    I have tried Tofutti’s “cream cheese”. Here’s it’s called “Sour Supreme” though but I think it’s just about the same thing. I use it on toast and rice crackers all the time, just like cream cheese and I LOVE it! It’s got a bit of a sour flavor that lends a nice touch. I’ve discovered I really like it on carrot/raisin bread, the bread is a little sweeter and then you’ve got this sour-ish flavor from the Tofutti, yum!

    About the milk alternatives. I’m a fan of rice milk and oat milk, rice milk is a little bit on the sweet side but in a good way and it’s got a quite thin consistency, it almost looks like milk mixed with water. Oat milk is a little bit thicker than dairy milk and I love it, it’s got this “oat-y” flavor to it and goes well with almost anything from tea to cereal. Oh, speaking of cereal, rice milk is GREAT with unsweetened cerial as you get that extra little sweetness you (might) want 🙂 Hope this helps. Are you vegan or just becoming vegan? What did you use as “egg” in your scrambled egg?
