In honor of my little man…and our Irish roots…I’ll share a bunch of recent [green] eats. As you’ll soon see, I have been in a major kale rut. And salad rut. Neither are bad things. 😛
Salad heaven #1: chard, romaine, tomatoes, carrots, avocado, & Sabra’s seasonal rosemary and olive oil hummus
Expo West sample: Brad’s kale chips
Vegetarian “chorizo” and kale rice casserole (recipe coming for this one because oh my gaaaaahhhh)
Salad heaven #2: kale, romaine, tomatoes, carrots, avocado and 365 sesame goddess dressing (new obsession)
Salad heaven #3: romaine, quinoa, tomatoes, carrots, 365 sesame goddess dressing
Salad heaven #4: lacinato kale, sweet potatoes, quinoa, seitan, and coconut aminos
alive & radiant Kale Krunch (I almost got the ranch flavor but went with my stand by tarragon dijon)

I had big plans to make a green veggie burger patty-cake in honor of the holiday, but time got away from me. There’s always next year tomorrow though.
Now go drink some green beer!

Elise! When you use hummus like in salad number one, do you use the hummus instead of any dressing? Does it coat the entire salad properly? It looks good, but I never knew if it was enough to cover the salad.
Like always you take simple things and make the most delicious looking satisfying meals. These will hopefully be my lunch inspiration for the rest of the week!
Okay, I’m super jealous of all your Kale chips. That sesame goddess dressing is gonna be my next Whole Foods pickup! I loved Annie’s goddess dressing but I’m almost out so I’m down to try a new one. Enjoy St. Patty’s Day with your perfect little baby!

Hi Elise- After skimming through your blog (love it), I noticed that you mentioned that you have/had IBS. I also noticed that you mentioned when you got off birth control you felt much better. I have IBS and feel like it has been ten time worse and is directly related to getting on birth control a few months ago. The doctor said that birth control definitely can mess with digestion. What do you think? Did you stay off for a while?

The salads look delicious and P is a real sweetie! One question…do you steam the kale / chard slightly before using it in a salad or do you eat it completely raw?
Since going vegan I’m all about hummus as my salad dressing and love making a bunch of steamed veggies to put in there, as the hummus gets all melty. Yum!

for salads like this i eat it raw. i do love it steamed/sauteed as well though. it does tend to be easier on the GI that way too…
i have stayed off it permanently. although that decision had more to do with the issues i had with the hormones and possible long term effects than GI stuff. but yeah, my IBS was definitely aggravated by birth control.
yup! i use hummus as the dressing and just keeping adding more and more until it coats everything. its heavenly.

I looked for that Follow Your Heart dressing that you’ve talked about so much a couple days ago at a new Whole Foods that opened by us. I couldn’t find it!
I’m not sure if I was looking in the wrong place (the dressings aisle) or if different Whole Foods stock different items?
I was disappointed!
Lame!! I’ve always seen it at every WF I’ve been to (nor cal and so cal). I usually get it in the refrigerated section w tofu and vegan mayo and that kind of stuff…
He is hands down one of the cutest babies I have seen 🙂 and will definitely grow up as one of the healthiest
The whole foods near me (in Tucson AZ) doesn’t carry it either! They have it for the salad bar but not on the shelves for sale. Boo 🙁
