Curry up slow cooker

These were the leftovers from this dinner.

Curried cauliflower with greek yogurt raita.

The curry flavor was rather intense, so rather than eat the remaining dish as it was served in the restaurant, I decided to try to extend it’s life and balance out the spices.

Enter slow cooker.

1 1/2 cups rice + 3 cups water + 1 cup plain almond milk

After 4 hours of slow cooking on low, I stirred it all together and added roasted cashews.

Then I left it on warm until dinner time.

Mmmmm…

The aroma was something else! I love curry dishes.

My mind is already brainstorming all the ways to replicate this dish and make it my own. The addition of tofu, peas, and/or golden raisins are the first ideas that come to mind…but the options are endless!

If I’d had coconut milk on hand, I think that could have brought out a whole other side of the dish too.

Man. My mind is racing right now. I better go write some of these ideas down!

    Mmm curry really is one of the best smells!!
    I’ve tried to recreate a few restaurant dishes before but none of them have come out as I wanted unfortunately. My dad has quite the knack for it though!

    You’ve spent lots of time in the Bay area so perhaps you know of Ike’s Place and their crazy awesome sandwiches? They have tons of vegan options and I’m on a mission to recreate his “dirty sauce.” Haven’t perfected it yet, but I’m enjoying all of the “failures.” 🙂

    I usually try but end up failing whenever I try to recreate a dish I had at a restaurant. I think it’s because I end up making mine too healthy and omit things like butter and oil which the restaurant most likely using a butt ton of. Luckily there aren’t many restaurants around here (at least not any good ones) so we spend most evenings eating dinners at home. Thanks for the curry recipe! It sounds awesome and I love any excuse to use my slow cooker. Woohoo!

    You had me at curried cauliflower and sealed the deal with those cashews yum!!! I am looking to made a GF version of the cheesy biscuits from Red Lobster. I confess that I haven’t been there in at least ten years, but someone mentioned that they were heading there the other day and I’ve wanted one every since.

    Does taking photos of the labels on whole foods salad bar count?? Hahahaha- ive done that often to inspire my own version…. And that curry creation is brilliant!
