Wow, guys. Is January officially the longest month of all time? I feel like we must be half way to 2021 by now! Are you ready for summer break, too?
There were leftover Costco chocolate muffins from a church thing and I took two home. Best. Decision. Ever. It’s moments like this that make me miss our membership. But then I remember the jam packed plastic section of the recycle bin following each trip and re-commit to keeping my waste down. Even if it means I lose the convenience of individually packaged lunch options.
I love the days when Kyle is home early enough to BBQ dinner. We had grilled teriyaki chicken skewers with rice and a veggie stir fry for dinner. It was as easy as could be.
Thanks to our CSA, I am making plenty of slaws. One thing I keep learning is that cabbage has the amazing ability to transform into a totally different dish with a new dressing.
This salad had quinoa, sunflower seeds, and cubed tofu tossed in Brianna’s poppyseed dressing.
Another day I did a soy miso thing with avo and cashews.
And then there was the tahini kale cabbage salad from a week ago.
Cabbage, cabbage, cabbage. Totally new each time!
My lunches have been full of leftovers, slightly reinvented with a Thai theme. I grabbed a bottle of Nugget market’s spicy sesame dressing this week which I massaged into some greens. From there I added whatever other leftovers I had to fill up the bowl – including teriyaki chicken, quinoa slaw, nuts, cilantro, etc.
Sometimes getting a CSA stresses me out, but sometimes it’s the kick in the butt I need.
And I know I haven’t mentioned it in a while, BUT…
