Guess what!?

I discovered a new favorite combination!

Mayo + pesto is amazing and adding it on top of chicken leftovers was a brilliant idea, if I do say so myself.

I also roasted potatoes and brussels sprouts. It was a fantastic dinner.

More sauce/dressing creativity struck in the form of the herby flavorful oil from jarred sun dried tomatoes. I could drink the stuff for sure.

I massaged all of the oil from the jar into the kale along with the juice from one lemon.

Then I added brown rice and cannellini beans.

And to serve, I topped it in feta and sunflower seeds.

What condiment(s) should I turn to next for our dinners? Nut butters?

    I have been making salad dressing with my leftover kalamata olive brine. It’s red wine vinegar anyway but with the olive infusion it is just so good… And anyway – waste not, want not lol

    P.S. I will be trying out the herbal chickpeas this afternoon! Thanks for the pro-tip 🙂
