Do you have random jars of sauce/dressing in your pantry? It can’t be just me…
I’ve legit had this bottle of Hilary’s chili-lime vinaigrette since back in my Thrive Market days.
I stopped that subscription a couple of years ago though because it seemed like they kept discontinuing things I fell in love with and running out of inventory on staples that I needed to order.
So anyway, this dressing was old, but I was in the mood for a chili lime cilantro kind of sauce for a salad. But I didn’t want a vinaigrette. So, I decided to add soaked cashews to it and make it a creamy sauce instead!
I don’t know why I haven’t done this before because it’s the easiest way to make a creamy non-dairy dressing. Don’t get me wrong, I’ve make plenty of cashew based sauces on my own, but combining them with another pre-made dressing is the short cut we all need in our lives right now.

I got radishes in my CSA and didn’t know if the greens were edible or not so I just assumed yes and ate them (along with romaine). 🙂
The rest of the salad had leftover sauteed tempeh, black beans, cilantro, pepitas, and feta crumbles.
It was such a big hit.
If I had endless ingredient options, I would have used queso fresco or cotija instead of feta. I also might have tried roasted corn in the mix as well.
We also had (unpictured) chip on the side, too.
Any ingredients you are missing right now that you can’t get? I was struggling with dessert and my parents surprised me with this box of Dove chocolate bars for Easter!

Turns out, I really love Dove’s dark chocolate! Not that this is a surprise, but I am so pleased at having something nice to look forward to at the end of the day. I’ve been mostly fine with this whole shelter in place situation for the past 30 days, but as a foodie, I’m starting to struggle with the inability to eat nice things that I crave whenever I want. It’s a silly thing, when you look at the big picture, but it’s honestly one of the things that brings me the most joy in life, so it definitely makes a difference in my mood as time marches on…
