crazy in love

Beyonce MUST have been referring to soy lattes when she wrote that song. I am obsessed! I can’t even put into words what has happened to me these past few days since Starbucks introduced me to the soy milk latte.
1) I don’t know what took me so long to try this…considering I am lactose intolerant, it is really a bit overdue of a revelation.
2) I am embarrassed to share this, but I have gotten 4-5 iced or hot soy lattes a day for the past Monday, Tuesday, and Wednesday. It is only a work thing, I swear, I won’t (and can’t at $4.50 per drink) keep this up on days I have off when I can make my own coffee.
3) That’s like $60 I have spent at Starbucks in 3 days! THREE days!!! Eek

There is something about the frothy Silk soy milk I just love love love. Plus, the fat in it keeps me fuller longer. I have found that I am eating less food at lunch time, because all I want (CRAVE) is caffeine in the form of soy. I have been getting one on the walk to work from the subway, then another at lunch, then another in the afternoon (if I can manage to jump out for a quick break) and then another after work for the subway ride on the way to the gym…so you see, it really is a problem (if for no reason other than economics).

I could be a spokesperson for Starbucks…

Anyways, here is the lunch I packed the night before (note: the lunch for Monday through Wednesday is the same since I have no creativity when it comes to work day lunches). I ate the sandwich (which was the typical smart deli “turkey” with ff Fage, honey must, Ezekiel bread and lettuce) at lunch time. I snacked on the raisins throughout the AM, and I had the apple in the PM.

Not pictured: my newest discovery are the C2 power bars. So far this week I have had the berry flavored one and the oatmeal raisin flavored one. They are so good! Plus they are the perfect snack when I am running around in the afternoon at work.

Dinner was a wrap sort of thing that I made with these whole wheat tortillas and a new type of tofu.

First I spread the plain Greek yogurt on the tortilla (it was Chobani not Fage).

Then I added organic arugula lettuce.

Then I added the tofu which I had heated up and chopped into little pieces.

This was the new kind of tofu that I got at the health food store I discovered on 96th and B’way. It is “Thai Tango” and was just as good as the other flavor I usually get (sesame). I didn’t use the wasabi ginger sauce it came with, but I did save it to maybe use in another recipe later?

And now I am trying to roll it up (unsuccessfully).
