Which of these meals looks like one that was made with Kyle in town?? The sun dried tomato Caesar salad with leftover chicken nuggets??? Orrrrrr the steak skewers with fried shrimp chips and salad???
Yeah, obviously the steak.
Because as delish as this dish was, it isn’t exactly glamorous.
This guy, however, was REALLY good and certainly looked the part, too.
I channeled my friend’s frying skills and didn’t burn the house down!
It actually wasn’t as hard as I thought it would be at all! Kyle captured a photo to send to Hong to show her because we knew she’d be so proud. I used canola oil and plopped in a few shrimp chips (like these) at a time and pulled them out with tongs once they puffed up into big fluffy fried chips.
I made this salad to scoop up into the chips. I used the lettuce leftover from the party in place of cabbage but otherwise I tried to replicate Hong’s salad as best I could…shredded carrots, cilantro, fish sauce, sugar, rice vinegar, tamari, and lime juice. No cucumbers though…because of Kyle.
These skewers were the highlight though.
I got them at Nugget! I never noticed them before, but the guy at the meat counter said they have them all the time. Who knew?!? This week they were on sale though, so I bought five for us to share.
I was going to do two per adult and have the kids split one, buttttt then P really really loved them so I gave him most of my second skewer.
And THAT my friends, is love with a capital L. Steak and bacon are the two reasons my boy wouldn’t be willing to go veg. He loves them wayyyy too much.
