A recent obsession has developed in the hippie household…Collards!
I’ve been meaning to try these greens for quite some time. Gena makes leafy wraps look so tasty. And her tutorial seemed basic enough for even me to follow. So I took a stab at it.
De-stemmed. De-ribbed. [Much easier than it seems]
Stuffed with falafel and hummus.
Rolled up like a burrito with a side of hummus coated baked yams.
Holler!
I was such a fan of my dinner, I decided to make collard wraps again for lunch the next day. Rather than go the Mediterranean route again, I opted for another Choosing Raw staple. Guacamole.
I actually have my own favorite recipe, and it involves a LOT of lime juice.
The rest of the ingredients are simple enough: avocado, bell peppers, tomato, cumin, paprika, and garlic salt.
I love avocado.
I didn’t remove quite enough ribbing on this one (guess I was just too excited to dig in!), but I don’t mind a little extra crunch in my life. 😉
Guacamole collard wraps. Mmmmm…
Have you ever tried collards? This was my first time! It was thicker than I was expecting. Definitely a perfect leaf for wrapping because of it’s sturdy consistency.
What’s your favorite green? Spinach and kale are still my top two.
I tried collards for the first time last night! And I just made falafel burgers so now I have a fun way to use up my leftovers.
I’ve never had collards but now I want to try them as a wrap! Yum!

I just tried collard wraps for the first time a couple weeks ago and loved them! I love the falafel idea, though! I’ve been craving falafel like crazy lately.
I have never had collards. They look like they would be bitter to me. But I can’t diss it till I try it I guess!
Yum. I wasn’t feeling quite ready for raw collard greens, so I stuck mine in the microwave (heresy, I know) for 15-30 seconds and it softened them enough for me to get down with them. I’ve been digging hummus with avo and apple slices in collard rolls lately.
Never had it! Spinach is my fav.
Beautiful wraps! I’ve had collards a few times, but I’m completely in love with swiss chard right now. I got it every week in my CSA last year, but only JUST learned how to make it and now I’m obsessed!
I don’t think I’ve had collards since I was in Louisiana many moons ago.

Oh, I love chunky guacamole! Yum! I just tried collards for the first time last week! I had to find a quick alternative to spinach since the store I usually get it from totally jacked up the price. It still doesn’t compare to spinach (my fave) but I do enjoy the crunch! I actually chopped it up and threw it in a salad yesterday! Twas tasty!

I tried collards for the first time a couple of weeks ago. I loved making them as wraps! As far as greens though, I’m still pretty boring and probably rely on plain ol’ spinach a bit too much. It’s just too easy to throw into any dish, though!

I’ve had cooked collards with garlic and balsamic (yum) but never raw and wrapped. What a great way to get your greens. On my list to try!

Oh, those look lovely! I love the idea of using a veggie as a wrap rather than a tortilla! Methinks I will try those out since I have been seriously craving falafel too!
This is not related to this post, but I wanted to tell you that you looked unbelievably fit on your wedding day! I just got engaged about 2 months ago and I am hoping to spice up my workout routine a bit for the big day.

Love spinach and starting to like kale. Although after about 3 cups it starts to trigger my gag reflex…I figure that’s normal for beginners

it took me FOREVER to find these too…whole foods didnt have them i actually got them at a conventional grocery store

I’ve been wanting to try these since I saw them on Gena’s blog, too! I have had collard greens – but only cooked, never raw. I’ll have to give-it-a-go!
Your wraps look great, I’m a collard fan too since I’ve been getting bunches of collard green leaves in our CSA box, they’re great for Sunshine Burgers, raw tacos and even in smoothies.

Collard wraps are soo good. Have you tried the one at Real Food Daily? It’s a little pricy for something I could probably replicate at home but it’s pretty great.
I can’t really think of a green that I don’t like? Kale is probably number one. Chard is great in smoothies, too, especially when mango is involved. And I love arugula for salads.
