Kyle brought these home for me from work.
Marc’s mom’s macaroons
Ingredients:
- 4 egg whites
- 1 tbsp vanilla
- 1-2 tbsp sugar (to taste)
- 1/4 tsp salt
- 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total)
- [optional] bittersweet chocolate, melted
Directions:
Beat egg whites until soft peaks form, add salt, sugar, and vanilla. Mix in 2 1/3 of coconut packet.
Scoop into a medium spoon and press in.
Put on baking sheet lined with parchment paper.
Cook at 350 degrees F for 15-20 minutes.
Coconut burns easily so watch it carefully.
Dip in melted bittersweet chocolate.
I’ll be making these as soon as our holiday sweets are gone. Which seems like it may never happen (not because we don’t eat chocolate and cookies every night – we do! – but because we have such an obscene amount of them both).
This is great Elise. I wonder if you will use this sweetened coconut or unsweetetened. I never buy sweetened coconut anymore. Anyway if you make it with unsweetened coconut flakes I would love the recipe!

I’m confused regarding how much coconut to use. Do you mean 2/3 of the bag or 2 & 1/3 cups of coconut or perhaps, 2/3 cup? Please clarify. I’m eager to make these for my hubby. They are his favorite. I’ll probably eat quite a few myself. Thanks.
sorry – just realized that i wrote it confusing – its 2 + 1/3 of the TJs bags of shredded coconut. each bag is 6 oz so I’m guessing it’s ~14 oz in total.
