Chocolate Cherry quick bread

I know it’s all like pumpkin this and pumpkin that and pumpkin all. the. things. up in blogland, but I actually have a non-pumpkin quick bread recipe today.

For the record, I will be making up for lost time and squashing my face away for the next 90 days so don’t you worry about the absence of gourds this first week of fall.

We all know October is the best month ever.  It’s pink, it’s my birthday, it’s football, it’s comfort food.  It’s everything good.  So we will get there soon, promise.

In the meantime, cherries and chocolate aren’t too terrible of a back-up.  I used zero added sugar in this and thanks to the greek yogurt it was just subtly sweet.  Plus, no added sugar means that adding nut butter and syrup breaks you out even.  That’s how things work in my kitchen mind.

Chocolate Cherry Quick Bread [gluten free]

Ingredients:

  • 1 1/2 cup almond flour
  • 1/2 cup oat flour (certified GF if needed)
  • 1/4 cup cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 16 oz (1 lb) black cherry Greek yogurt (I used Chobani blended)
  • 2 egg

Directions:

Pre-heat oven to 375 degrees F.

Combine dry ingredients, then add in the yogurt and eggs and stir until mixed.

Pour into greased bread loaf pan and bake for 35-40 minutes (until a toothpick comes out of the center clean).

Slice once it has cooled.

Notes:

Like I said before, this isn’t a sweet bread.  I wanted a gluten free breakfast option or late night snack that wouldn’t damn my day and send my blood glucose levels through the roof.  If you want a more chocolate dessert type bread, I might recommend increasing the cocoa (to 1/3 – 1/2 cup) and adding some sort of sweetener (maple syrup, honey, agave).

This recipe is for a large loaf (so use a regular loaf pan or make a few mini loaves to share freeze for later).

    quick bread means yeast free – so its seriously idiot proof. i mean, yeast breads arent hard either, but i know they intimidate some people. try this one or any of my other quick breads – banana bread and pumpkin banana bread are my faves 🙂

    sometimes yes, sometimes no. cocoa solids have fodmaps.
