Remember how I turned into an egg once I got pregnant? Since then it’s been savory breakfasts 99% of the time. Fried eggs with a side of fried eggs please. Until last week when my body randomly decided waffles and banana bread were the only way to start the day. Well okay then! At first, waffles may seem a labor intensive breakfast choice. But actually, they’re not! Way easier than pancakes! You pour it in and go about your business in the kitchen and it tells you once it’s done…sooo…winning! I also should share the… Read more >

Mama’s little helper. The addition of shoes to the wardrobe has transformed him into a little boy. He’s non-stop exploring. Still not walking, but he’s perfected his cruising skills, so it’s only a matter if time (days). Green toys. And now the word tractor is a part of his vocab. Davis appropriate. Inspired by Vintage Mixer’s kale coconut & chicken salad I made this guy for lunch. I have been struuuuuggling with lunches lately. I don’t know what to eat without soy or nuts or hummus. I’ve been trying to limit meat to… Read more >

The whole shebang of last week in one post. Here goes. Breakfast on Monday was the last of this savory bread and fried eggs. Breakfast on Tuesday was out – I had a savory crepe with hash browns at Crepeville. Because Crepeville’s portions are awesomely massive I had leftovers for breakfast on Wednesday. Which I paired with two fried eggs. Thursday I made steel cut oats in the rice cooker (the crock pot was already occupied) for our whole family. I topped mine with a bunch of non-nut things (aka seeds galore) – including… Read more >

Turns out I eat a lot. 🙂 Ha. As if that’s a surprise. Here’s my 99% complete documented eats (second helpings noted). Breakfast: fried egg + 2 slices of chocolate cherry quickbread (half of one was eaten during the cooking process) Lunch: 3 slices of GF bread toasted and topped with avocado/egg salad + carrots + grapes + strawberries I get questions if I eat fruit (because I rarely show those little snacks) and the answer is YES! Of course! I tend to eat seasonally – so lately it’s been grapes, figs, strawberries, raspberries, and… Read more >

Monday Monday Monday. In nursing, there isn’t really the same stigma for the various days of the week because every day is (potentially) a work day. Fridays don’t mean the next two days are off. Wednesdays aren’t a half way mark. And Mondays aren’t the first day back after a break. So why do Mondays still have that baggage for me? Probably because spending the weekends with both my boys are so awesome. And I hate that it has to end. I also usually do grocery shopping on Mondays and I truly have come to… Read more >
