My blog is turning into a “how to use” x, y, z ingredient from Trader Joe’s. Here’s my newest favorite. And here’s how to use it. This recipe started when I went to the freezer in search of something to make for dinner.  I offered the kids the option of salmon or shrimp and they couldn’t agree (of course) so we compromised on salmon first and shrimp later. Pistachio Pesto Shrimp

I have another recipe for you guys! I’ve been on fire in the kitchen lately.  Thankfully, I mean that metaphorically. Today we have for you a zoodle adventure! I spiralized 4 small zucchinis and soaked them in hot water for the whole afternoon and by the time I went to serve them they were perfectly soft, but neither mushy nor raw. Butternut cheeze lasagna

Well, I officially perfected the cashew butternut cheeze lasagna I was working on.  And by perfected, I mean IT IS PERFECT. It’s my new favorite dinner and it was pretty simple as far as lasagnas go.  And IT WAS SOOOO GOOD! Kyle and I were basically oohing and aahing after every bite.  And P (who dislikes cashews) ate every last scrap without any idea that it was not a cream based sauce. Buncha Bowls

Odds and ends salad for lunch… kale (from the garden) home-made balsamic vinaigrette roasted salmon avo candied pecans cherries It’s CHERRY season people!! I picked this first little cup full (from a single branch) after a morning run to see if they were ready and they were!! So then I sent the kids out with Kyle later that morning and they came back with this! WHOAAAAAA. Can’t quit you kru

Is this not the most gorg sashimi presentation?
