Summer dinners

I went back to my beloved Winter vegan salad!  I just couldn’t stay away, ha! I had bulk roasted butternut squash and cauliflower for the kids and then stole some for my salad too because I had all the rest of the ingreds… When the cards fall into place like that…you can’t ignore the signs!  So I just HAD to make it.  And guess what – it was as good as ever.  Obvs. And now for a few more dinners from the week. Morning swim

I bought a bunch of PB2 for peanut OIT dosing purposes several months ago but then realized I wasn’t allowed to dose him with it because we don’t dose in terms of peanut protein weight but rather the weight of whole peanuts.  Sooooo…I started eating it myself! Post vacation cleansing

Part of the problem with doing such a good job of eating everything in the fridge before you go on vacation is that you return home to LITERALLY NOTHING. The end of Idaho and the start of Summer

Hey hey hey!  Welcome to our view of Lake Payette from the Shore Lodge in McCall. I’m getting spoiled

Imagine waking up and working out and showering and then coming out to have your kids fed and occupied and this spread left before you… I mean seriously.  Is this heaven? Those are gluten free oat muffins, by the way, and even though they look dense and hearty, they are actually quite light! I ate outside while watching LEGO structures go up by the second.
