40 years of marriage

Cheers to 40 years! My parents have been exemplary role models for marriage so it makes perfect sense that my siblings and I would throw them a party to celebrate.  The number of people who RSVP-ed yes blew us away!  Traveling from near and far to show their love and support for our awesome parents.  🙂 My G-ma had a fun time seeing the kids.  It’s been almost 6 months. I spent the morning with my sisters setting up and getting organized so that by 4:30 we were all ready for the fun to begin…. Read more >

Packaging things up

I have SO much to catch up on! I’m going to randomly share the last bits and pieces of last week so I can recap the highlight of the weekend…the PARTY that my sisters and I threw for my parent’s 40th wedding anniversary. 🙂 Yes, I made the junky salad again. I had half a bottle of Brianna’s dressing left, so I may as well, right??  It was GOOOOOOD. The co-op didn’t have the Siete chips, but luckily Nugget had one bag left!  Eek!  I grabbed the beanfield “nacho” chips too, just in case I wanted to… Read more >

The Junky Salad

Continuing the easy path to dinner bliss… Remember the taco salad recipe I posted from my reunion party? I made it!  And it’s just as junky as ever, but slightly…how do I say this…fresher??  More nutrient dense? I had half a bag of these left so I swapped them in for the Doritos.  Big time upgrade right there! Crushed chips in salads make the recipe pop like no other ingredient can.  Truth be told, I don’t know that I’ve ever had a Dorito outside of the salad that this one was inspired from.  Is that… Read more >

Foodie in the making

Originally, I was going to make this Thai roast chicken to add to these leftovers.  But then I ended up giving Kyle some of the noodles in his lunch so there weren’t enough left to feed the fam.  Oops!  It’s all good though, because now I have a small serving’s worth that I may just save for myself! So instead I made an Asian slaw. Kyle was SUCH A FAN of this meal.  And then kids ended up asking for seconds too, but it was already all gone!  Oops! The slaw had one bag of… Read more >

Gnocchi drama

Here’s how mornings this week are going. V wakes up before 6 but stays in her room until her clock turns green at 6:20 to come wake me up.  She doesn’t jump on me or anything, but somehow the fact that it’s so early feels on par with the physical assault of a cannon ball to the face. Kyle’s out of town so I don’t have anyone to manage the kids while I exercise…so my window for working out is pretty narrow.  I still get it done, but it’s tight considering how slowwwwwwly they go to… Read more >
