Butternut pomegranate salad

I’m sure I’ve posted many a kale salad like this before…I bet I could make it blindfolded. It’s basically a version of the grain salad I make every day but swapping in roasted butternut squash for the grain and pomegranate arils for the cranberries. Can you see the formula? Green – kaleCarb – squashCheese – chevreNut – caramelized pecansSweet – pomegranateDressing – champagne vinaigrette That’s it, that’s the formula. I also added chickpeas because I had some leftover and figured we could use more carbs anyway. I feel like I am roasting squash on a… Read more >

The last week before break

We have had a WEEK! It has been such a major countdown to get to this break, I’ll tell you what. I don’t know who is more excited – me or the kids!? We now have two glorious weeks off of distance learning, and I plan to spend the entire time without ANY semblance of a schedule. The weather outside is frightful

And yet, I’m still forcing us to go out and blow off some steam every afternoon. It’s not actually that bad yet, but 50 can feel pretty cold after an hour or two. Breakfast lunch and dinner

I don’t have much to say right now. Sometimes I get really inspired to write and ramble off effortlessly. That’s not now. I’m tired. Maybe that’s it. Kyle’s out of town. Point A and B are probably related to C. In any event. Here’s the banana bread I made, which lasted a few days. I tried to let the kids sleep in and set my alarm to work out before they were up. It has worked decently well actually, and we haven’t had to rush to get to school on time at all at all… Read more >

Best butter brands

Did I call it or did I call it? I knew the second I discovered this Nourish bread in the back of the freezer it’s days were numbered. The only problem was, I couldn’t decide what I wanted on it. I kinda felt like nut butter, but I don’t love any of the nut butters I currently have on hand. I mean, they are all fine, but none of them are calling to me lately. Maybe I just need a break from the ones I have been buying? Normally TJs is fine for an every… Read more >
