Oregon and Idaho III

This will be quick because we drove back in two days with a quick stop in Bend for the night. We got coffee at Bobbie Jean’s (MEH) on the way out of town and can’t say much about it. It was really hard to edit down the photos I have from our time with Kyle’s fam (and I feel like I barely took any pics!). We see them so infrequently that the week of togetherness is very important for grandkid bonding. Now that the kids are older, it feels so sweet when they recall things from past trips to Idaho. 7 quick meals

This is an old post that I never got around to sharing but when it comes to weeknight dinner inspo, I figure it’s better late than never. This was one of those meals that I came up with about an hour before we had to eat. Occasionally I post on Instagram stories about the podcasts we (me + the kids) listen to and I always get so many questions about it, so I figured I’d write out a quick list of some of their favorites. Zucchini twice

This happens every summer… I have a million zucchini and not enough recipes. Luckily this year I have a new cookbook to help me out… Just like Ottolenghi’s other cookbooks, this one is full of hits. The best part about these recipes, though, is that they are quicker to make (hence the name – Simple)! How good does stuffed zucchini with pine nut salsa sound?! So good right. Well guess what.
