Overhyped pasta

I know this is not a popular opinion, but I don’t really love pasta. You probably know that since I don’t often share recipes with pasta. The weekly menu

Three of this week’s meals were from the skinnytaste One & Done cookbook. The premise of the book is that it’s a bunch of one pot types of meals, grouped together into chapters by the appliance you would use to cook it. Always double it

Allow me to present my argument for always roasting extra veggies…. Behold! The quinoa tempo bowl (from my cookbook of the year Run Fast Cook Fast Eat Slow). It’s not too labor intensive to make on it’s own, but there are definitely a lot of parts to it. That said, busting out a quick 1-2 hours of prep on the weekend makes it totally reasonable to whip up on a weeknight. Boozy bevvies

Soooo…apparently my new hobby is trying out different boozy drinks (seltzers, kombuchas, ciders, etc). I don’t really drink beer and wine at all anymore. I think I average one glass of wine a year. Musings on stir fried tofu

The easiest thing about tofu stir fries is that all you have to do is switch up the veggies and it feels like a totally new dish! Take it one step further and add nuts or a different sauce and then it’s really something unique. This combo had peas and mushrooms with quinoa and peanuts. I’ve (finally) discovered the trick to sautéing tofu to get a golden char on it, and that is (a) using a non stick skillet, (b) using oil, (c) using high heat and (d) not stirring it too much.
