Waldorf wedge

This is not exactly a normal salad, but it also started out as one thing and then it morphed into something else as I was making it… Ok ok ok. Truth be told, I didn’t have a clear vision of what I was making when I started, I just figured I’d find things in the fridge and make it work. I knew I had enough cheese, nuts and whatnot to make a good salad happen, I just hadn’t yet gotten to the editing phase of the process when I started (which is not necessarily unusual… Read more >

Chicken red curry stew

This is going to be short and sweet because I’m waiting for a plumber and trying to get everything squared away for dinner in advance of the mess I’m anticipating will ensue. But first, can I please vent on how annoying it is to be given a five hour window?!? That’s a big a$$ range to plan around. Anyway, I promise to move on now. Let’s get right to the recipe. Chicken red curry stew Ingredients: 1 red onion, minced 1 garlic clove, minced 1/2 tsp salt 2 tbsps olive oil 2 tomatoes, diced 2… Read more >

Breakfast lunch and dinner

I started the day with nourish bread and miyoko’s butter. For lunch I had the leftover Brussels salad from What’s Gabby Cooking. I think the salad was even better the second time around! Probably because the Brussels were even more softened from an extra day of dressing breaking them down. I made the Vietnamese caramel sauce from my Dinner in an Instant cookbook,… Read more >

The never-ending battle

We got back from Tahoe and I haven’t found the time to go shopping because Kyle’s out of town so we are living off the freezer and pantry. It’s fine. I’m fine. We are all fine. Fancy stuff going on over here… Luckily I have alllll of this chocolate (and more!) to keep me fulfilled in a different way. I will make it to the store eventually, but I still have so many old meals to catch up on posting anyway. Like these two meals from Run Fast Cook Fast Eat Slow. First I made… Read more >

A Med-inspired hippie bowl

Remember back in this post when I shared all the different grain & green bowl combo ideas that I could come up with off the top of my head? Creating hippie bowls is like a sixth sense I have. I swear, I can do it in my sleep. This one is similar to one of the Mediterranean inspired bowls that I mentioned in that post, with a few tweaks… So now let me share! Med-inspired hippie bowl Ingredients: 2 bunches of kale, de-stemmed and chopped 1 – 1 1/2 cups barley 1 can (1 1/2… Read more >
