Screaming Santa

My poor nieces!!    Ha!  Why are little kids so frightened of this jolly man??  I swear, every family has a photo like this.  But is it normal for adults to react with laughter?  Because I can’t stop looking at the picture and cracking up.  Maybe I’m using the word “adult” a bit liberally here.  I asked my mom to send me some of our old Santa photos and figured it’s only fair (to my nieces) if I share.    Here I am with a death grip on my mom (leaving poor little Laura to… Read more >

Gulfstream Wild Rice Salad

The star of my lunch was…wait for it…   Leftovers!! How’s that for anti-climactic.    Predictable.  Anyhoo.  Sorry my eats have been so repetitive over the last few days, but I’m trying to clean out the fridge before we leave next week.  Only one week ‘til Kyle and I are off to Buenos Aires!!!   At least I have a recipe for you.  It comes from a restaurant in Newport Beach called Gulfstream (part of the Hillstone Restaurant Group) and was part of our Thanksgiving feast. Wild Rice Salad (vegan, gluten free) Ingredients: 1 cup… Read more >

Carrot glow

When the winter months start in, it’s always best to have a tanning back-up plan.  Enter carrots.  With B-carotene, you don’t need the sunlight to get your orange glow on. But just in case this slightly superficial side effect isn’t your thing, here’s a delicious and comforting carrot dish to (hopefully) win you over.  Good flavors are enticing to everyone, right?  Right. Psst, it’s a slow cooker recipe, too…so that means it takes minimal effort to make.  Faux tan + yummy food + not much work = win win win.   Soy Glazed Carrots… Read more >

Green bean casserole

I know there are a lot of families that consider a green bean casserole a holiday staple.  We were never that family.  So I’ve actually never tried a green bean casserole.  To be honest, it doesn’t sound that amazing. To be clear, this is not a green bean casserole.  But it is a baked pasta dish.  And it does have green beans.  So by default, it’s kinda a green bean casserole.  Does that make any sense?  Hmmm… Well, I’ll just share the recipe and let you decide. Creamy Green Bean Casserole (vegan) Ingredients: 16 oz…. Read more >

Ah Monday

Mondays are so hideous.  Unless you work the weekend shift.  Saturday and Sunday shifts tend to drag…the hospital’s inactivity is both a blessing and a curse.  I look forward to the start of the week the way most people long for the weekend.  My Saturday was studded with bouts of obnoxious psych patients (and inappropriately overbearing family members), which led me to dread coming to work on Sunday.  Fortunately we have charge nurses who look out for our sanity, so my assignment was switched up on Sunday. Kyle was watching football when I got home… Read more >
