Quick bread for little fingers

I made this bread for me and P thinking he’d do what he always does – try it, like a few bites, but ultimately be over it by the 4th bite forevermore.  NOPE!  Little man took this loaf down in two days with not much help from mama (which was a difficult sacrifice on my end because it was gooooood). Coconut Flour Banana Bread [vegetarian, gluten free, grain free, nut free, soy free, dairy free] Ingredients: 3 large super ripe bananas, mashed 3 eggs 1/4 cup applesauce 2 tbsp coconut oil 1/2 tsp cinnamon 1/4 tsp… Read more >

Puffed Rice Granola

I tried switching P from corn to rice puffs recently (I may have mentioned it in a previous post but I can’t remember) just for a touch of variety.  The corn puffs aren’t exactly health food, but neither are the rice ones.  They are just easy for end of the meal (clean up) time and on-the-go snacking.  In any event, he didn’t take to the rice puffs at all so I’ve been trying to think of something to do with them.  I asked twitter for non rice crispy treat ideas but got crickets in return,… Read more >

Another weekend in the books.  I like the weather so much right now…warm with a breeze…perfect for eating dinner outside. Since P obviously can’t be outside all day, we do little intervals in the sun.  He’s obsessed with “outside” <– his favorite word.  He knows exactly what it means and we think he’s trying to say it himself sometimes.  He points to the door handle and begs to go out nearly every second of the day.  Needless to say, we are in the shady portion of the yard as much as possible. Anyway, we invited some (new) friends… Read more >

My highlights: week 18

I skipped a couple of weeks…but I have some photos uploaded from the past few days so I figured I’d share. Watermelon messes at the farmer’s market.  Adorable. The best freakin’ salad.  Brings back memories of childhood because it’s my mom’s recipe. We are both excited for this one. NuGo bar (chocolate pretzel yummmmm) and Bon Appetit make for perfect naptime material. Lunch date with my mom. And with that, I’m off to soak up family time!

May day

P seems to be waking earlier and earlier these days so my breakfasts are kinda growing in order to hold me over for the long(er) interim between the morning shuffle and lunchtime. Kyle’s a gem of a husband and so unless he has a really early meeting or call, he plays with P for a little bit and let’s me get a workout in. If he can’t, I take the BOB out for a stroller jog that ends with fun at the park.  We actually have a few different parks near us, so depending on which route I… Read more >
