Mini meal plan

Pacman likes to eat.  And I like cooking.  We are a good team. His meal plan typically goes something like this: Wake-up – bottle with hemp milk Breakfast – fruit, home-made bread, eggs scrambled with greens, puffs Post AM nap – bottle with water Lunch – fruit, veggies, puree mash-up Post PM nap – bottle with water Dinner – meat, veggies, fruit, avocado, pasta/puffs Bed time – bottle with hemp milk Breakfast is his biggest meal by far, and lunch is his smallest.  Dinner is usually comprised of leftovers from his earlier meals and parts of our dinner since I feed… Read more >

The weekly menu

Zee plan above, photos and links to follow. Yup, I made Jessica’s BLT chopped salad yet again.  Kyle basically requests it every week now.   This (goat milk) feta is the bestest in the land.  I have to go to Nugget market especially for it because WF doesn’t carry it.  Last week I tried a different goat’s milk feta (from WF) and it funked up my gut.  Boo. Pulled pork and veggies and cornbread.  Crock pot winner.   I don’t even know why I bother showing Caesar salads anymore.  They’re standard.  Nooch-ified per usual. I made… Read more >

Chickpea Wild Rice Salad

I am really on a roll with all these posts in a row!  Sadly, I lost my camera battery charger and since it died at our Memorial Day Party I haven’t been able to upload pics (such a bummer because we set up the baby pool for the littles and OMG cuteness overload).  I have my cell phone photos but they’re subpar at best.  Still, I’d like to share this recipe since it was a real hit and super easy. Not the prettiest, I’ll admit, but sometimes you just have to accept that things aren’t always pinterest-y in… Read more >

Sweet peachy cornbread

I came up with this on the fly last week after realizing too late in the day that we were out of plain almond milk and very low on cornmeal.  Necessity is the mother of invention though…orrrrr…in Elise terms…being cheap and desperate will lead you down different paths than your ideal route.   But I made it work, and I wrote down what I used in case it was decent and (shocker) it may be my favorite cornbread recipe ever.   Sweet Peach Cornbread [gluten free, soy free, nut free] Ingredients: 3/4 cup corn meal 1 1/2… Read more >

Brownie mix cookies

I was debating between making brownies or cookies for our memorial day party and was kinda in the mood for shortcuts since I was making a few other things.  So I decided brownies would be easier because TJ’s has a gluten free mix. But then! I never would have thought of this on my own but I happened to look at the bag and noticed a cookie recipe.  Best of both worlds. I made tweaks, naturally.  There wasn’t nearly enough liquid as per their recipe so I upped the water.  I suspect any liquid would work though…. Read more >
