Allergy friendly yellow cake

I know (I think?) what you’re thinking.  Yellow cake?  What’s the point?  Chocolate is where it’s AT!  I agree with you, but every once in a while you need some quality yellow cake in your life.  Like on the 4th of July. Because it just feels right.  Is #merica just so 2013? Since I wanted P to be able to eat some, I made it allergen friendly.  As in, no wheat, gluten, dairy, nuts, or soy.  The batter does contain eggs and I’m not sure if it would turn out without them but if anyone wants… Read more >

Matcha Ice Cream

This flavor is the best one yet! I got this matcha green tea powder as a free sample from the company, Kiss Me Organics.  Truthfully, I’m not one to take up freebie offers very often (they’re not usually things I’d eat – free or not), but I was really excited about this one.  The health benefits of green tea are numerous, and matcha powder is (dare I say?) even more exceptional.  Plenty of studies have shown a link between consumption of these powerful antioxidants (EGCG) and cancer prevention.   Anyway.  Kyle’s favorite Jamba Juice smoothie (which is probably no longer on… Read more >

My highlights: week 26

Eeek!  I’m behind with the highlights posts.  Kyle was (is) out of town so I didn’t get around to uploading pics, but here are a few from last week. We’ve been spending lots of time at our friend’s pool.  They have a dog, which excites P like nothing else in the world.  He loves dogs almost as much as garbage trucks. Range = 1 mile. This is SO me.  It makes Kyle insanely nervous that I drive the car until there’s nothing but gas fumes left in the tank, but I swear I do it every dang time.  I… Read more >

The weekly menu

They aren’t in order but here was last week’s menu. First up, grilling! I usually let Kyle pick our weekend eats because he loves BBQing and doesn’t get a chance to do it on weeknights.  This pork was on sale so we went for it, knowing that the extras could be used in lunches, etc. I made a simple salad on the side – just tomatoes, goat gouda, basil, olive oil, balsamic vinegar, and salt +pepper.  The basil and tomatoes were from the garden.  The goat gouda was from TJ’s and was realllllly good. I wanted to… Read more >

Baked chicken & peaches with quinoa and sunflower cilantro lime sauce

There’s no good name that can sum up the yum so I’m sorry about the title. It’s the sauce that’s the winner, but I can’t really determine the main ingredient in it that makes it so awesome…I guess that’s why it’s so awesome though, right?  So many things meld together in taste bud harmony.  Wow was that a gem of a sentence – I should be a food critic! I copied much of the sauce recipe from this Bon Appetit recipe, but I’m going to write it up with all the changes I made below…. Read more >
