The weekly menu

Playing catch up here…with last week’s meals. Actually, the first dish got bumped to this week because it never happened.  Also, I made the pan fried tenders with rice and salad on a night Kyle was out of town and for some reason didn’t take a pic.  I also forgot to take pics of the Asian noodles, too (!!),  which is ridiculous because I made two massive batches, which we ate as leftovers throughout the week (the other batch went to a new mom).  Multiple opportunities to photograph, but still escaped the camera.  Meh.  So given that,… Read more >

I took two trips to Costco this past week which was definitely two more than I wanted (why I grocery shopping there so annoying?).  Anyway, in spite of that, we still seemed to have no food in the house which was especially odd.  For the record, one of the Costco trips was to buy all the food for our Trinity trip…which was a huge success food-wise thanks to our amazing friends and their compassion and empathy when it comes to P’s allergies.  The menu was simple but delicious and I can guarantee nobody starved.   😉 Ok… Read more >

Trinity weekend

This past weekend we were out of cell phone reach and it was so awesome. The drive there was loooooong but P finally gave in a slept for a bit of the way.   And we had these guys waiting to greet us when we arrived. As well as these guys.  We picked eggs for the next morning.   And now P completely understands the relationship between chickens and eggs.  Seeing it first hand does so much more than a book can, that’s for sure. Simple Mills pumpkin muffins

I used to bake with almonds all the time – the “flour” makes such a great nutrient dense option for GF baking.  But now that we are an allergy friendly home, we don’t re-stock various ingredients as they run out.  Namely, nuts (and their butters/flours).  So I was super excited when Simple Mills offered to send me a few sample items. The weekly menu

I went big with Sunday prep this weekend (we’ve been out of town or busy the past several weekends that I’ve been doing it mid-week during nap times, but I way prefer getting a ton of stuff done before Monday hits). That’s brown rice in the rice cooker, turkey lentil bites in mini muffin form, roasted butternut squash, and bacon. I froze most of these after they cooled and P has already eaten almost all the ones I didn’t freeze.  Highly rec this recipe for toddlers.
