Super low carb granola

My friend just got diagnosed with diabetes so I’ve been working to help out with managing the diet side of things (not that I’m an expert or anything, but I do know more than most people about nutrition in general). For Christmas I made them granola – without any grains and hardly any carbs at all. Low carb granola [vegan, gluten free, dairy free] Ingredients: 1/2 cup almonds, coarsely chopped 1/4 cup almonds, slivered 1/4 cup almond meal 1 cup cashews, coarsely chopped 1/2 cup pepitas 1/2 cup shredded unsweetened coconut 1/2 cup hemp seeds 1/2 cup… Read more >

A massively massive Christmas post

Merry (belated) Christmas! We spent the 24th (day) at my parents’ house but came home to spend the night and next morning together with our little family.  After we did our stockings, my parents and sister arrived and we hosted them here in Davis.  New traditions. 🙂 I started cooking a couple days in advance so that on the day of Christmas everything was pretty much done except for easy last minute things.  And the turkey.  First time cooking a turkey guys!!!  I was nervous, for sure, because ummm…kinda a big deal to host Christmas for the first time and… Read more >

Breakfast struggles

I don’t know what happened but sometime mid-week I lost my breakfast appetite.  It is the weirdest thing.  I wake up hungry, but then I work out so my stomach falls asleep or something.  And then I make tea and feed P and wait for my body to feel like food…and it takes a LONG TIME!  So bizarre.  Usually my breakfast cravings are my strongest.  It’s my favorite meal after all. I only ate eggs two days this week!  It’s like I’m teething too.  [P has had a mediocre appetite as well thanks to what is… Read more >

The weekly menu

I haven’t posted anything substantial in a while because I keep forgetting to take photos of my meals.  Isn’t it weird that NOT capturing my food on camera is my abnormal?  It used to be second nature.  Oh to be a food blogger… I assure you I am still eating.  In case you had your doubts. This week started off with lots of seafood dinners.  P loves fish and shrimp so they are always winners to make. Backing up to last weekend, my mom made salmon with a mustard sauce, which we served over quinoa, sautéed chopped spinach,… Read more >

Ketchup post

This post will have zero to do with ketchup, I’m just in a weird mood. Let’s CATCH UP. Desserts are all I want to make this time of year.  I need a good [but EASY] fudge recipe that doesn’t involve condensed milk.  Anyone?  Also, why does every brittle recipe require a candy thermometer.  I am not going to do that, but I want brittle.  Dilemmas. Ok, so real food. Ha.  Still not quite the “real” food I was hoping to get to.  But Costco just started carrying these for about half the price they usually are, so… Read more >
