My mom’s birthday weekend

This weekend was a blast, and it’s not just because I was at my parents’ house with tons of support, but also because my dad threw my mom a big party for her 60th birthday and I got to see so many family members who I haven’t seen in way too long. The weekly menu

I love short weeks!  This one flew by not only because Monday was a holiday but also because I am leaving (have left) to go to stay with my parents for the end of the week and weekend.  Low fuss cooking and leftovers were the name of the game. Backing up to Saturday (of the Memorial weekend) we had turkey burgers with a cauliflower salad. Toddler meal updates

I haven’t shared much in the kiddo food department in a while and that’s mostly because not much has changed. He prefers mainly carbs to start the day, which is odd since he used to LIVE and DIE for eggs.  Now he’s over the eggs.  Whatever.  He alternates between home-made quick breads, waffles, pancakes, donuts, and oatmeal.  All with a bunch of fruit (usually blueberries or grapes).  And bear in mind this is after his pre-breakfast snack of apple slices.  And then typically sunflower and pumpkin seeds until he’s full.
