The weekly menu

This week’s menu starts off with some of last week because I got home from Tahoe to an empty fridge and decided to do the grocery shopping for the remaining (two) days of that week and this one all in one swoop. Inspired by my latest library haul (cookbooks), I made several Gwyneth recipes. [In terms of reviews, I LOVED “It’s All Good” so much I ended up buying it for myself on Amazon Prime Day (for a stellar discount).  I’ve made a handful of the recipes already and I have decided to challenge myself to cook… Read more >

Lake Tahoe half week

TAHOE! Comfy enough little dude?  What a rough life… I took zero food photos while we were on vacay.  Zero.  We ate all but one meal at our rented house in Tahoe City.  The one place we went out to – Fire Sign Cafe – was SO good though.  I highly recommend for anyone staying/traveling through the area.  They make their own [everything] and have allergy friendly options aplenty (think coconut and almond milk, gluten free bread, vegan/vegetarian faux meats, etc.).  Not to mention, our waitress was fantastic.  Seriously, cannot say enough good things about it…. Paleo Asian Slow Cooker Pork Belly

Let’s get one thing out of the way right up front and just acknowledge the fact that I’m using the term “Asian” pretty loosely in this recipe.  If you’re looking for authenticity in the genre, I’m not your girl.  But if you’re looking for an Asian(ish) recipe that tastes delicious, look no further. Alternate title: when you buy ten pounds of pork belly… …you have some options.   For 2/3 of the portion (about 6-7 pounds?) I made a rub and Kyle grilled it for 70 minutes keeping the grill at 300 degrees. The rub had 2 tsp chili powder, 2 tsp garlic powder, 2 tsp onion powder, 2 tsp smoked paprika, 2 tsp salt, and 2 tsp brown sugar. I attempted to score the fat side, but I didn’t really know what I was doing so who knows if I successfully did that.  In any event, I did try to cut a… Read more >

One zucchini recipe

And just like that, zucchini game is ON. My mini man likes zucchini just like his mama, so I thought it would be awesome to grow some in the garden…but for the SECOND YEAR IN A ROW my plant has produced nothing but males.  What. The. Heck.  !?!? So I bought some at farmer’s market. And made muffins.  Mini ones to be exact.  And they don’t call for any sweetener at all so they are perfect for little ones with un-warped palates.  Or adults who want to give their sweet tooth a break.  They are still… Read more >
