The weekly menu

This post is actually half from last week and half from this week because I didn’t take pics of everything.  My bad.  Maybe you’ll still get good ideas of stuff to make from these few recipes though. Kale Caesar salad doesn’t need explaining.  We have Caesar salads all the time.  Kyle actually requests kale versions.  I’m lucky he likes the things I like.  🙂 Kyle grilled the chicken and corn and I don’t even remember what I marinated the meat with (maybe just herbs and olive oil?).  On the side I made a salad of tomatoes, basil,… Read more >

Allergy free home-made crackers

CRACKERSSSSS!!!  I finally got the recipe down and now I can share it after teasing you for the past two months… These are gluten free, dairy free, soy free, sesame free, nut free, and delicious! Packages! You guys have GOT to join Thrive.  I’m sorry to belabor the point but it’s such an impressive company – both in terms of mission and economics.  I’m a sucker for a good deal but I’ve already saved so so much money and I’ve only been a member for a month.  I now only have to go to the grocery store for fresh produce because I can get virtually every pantry item online for cheap.  No sacrifice in quality whatsoever.  Winning.  <– Use my link – it gets you 25% off your order (and shipping is… Read more >

BK

Guess who made it through her first flight!?  It was a red eye no less (not a fan of doing that with an infant by the way…never say never but, uh, never).  Focusing on the positive – we all survived.  🙂  But even more monumental than V boarding an airplane, was P staying behind.  We are so lucky that my parents are so close with my big boy because it made the trip way easier.  The only time anyone has taken care of him overnight was when we were in the hospital for the birth of baby girl… Read more >

Salads of July

I usually don’t photograph my lunch scene…but I decided that it would hold me accountable as I try to stay on track and keep my sweet tooth in check.  It’s all about staying ahead of the game.  Preparation is KEY to healthy snacking success. Kale, broccoli slaw, dried cranberries, sunflower seeds, avocado, (home-made) spicy mayo dressing.  Plus home-made crackers. You’ll notice a LOT of crackers in the following pics.  I am making them on repeat and repeat and repeat and repeat. Baby kale, broccoli slaw, edamame, dried cranberries, avocado, home-made crackers. Left: Kale salad, broccoli… Read more >
