Covered in ash

Another week of corona misery is creeping by.  How are you all surviving? We finally got a chance to breathe (literally and figuratively), but then BOOM another fire broke out (a few actually…) and now our new backyard patio is covered in ash and you can’t even see the sky.  It’s an orange brown haze that seems like the start of the apocalypse. Pistachios and dried apricots

Here’s a new combo that I made last week which we all loved… Roasted chickpeas 1 can chickpeas (~2 cups) 1 tsp olive oil 1/4 tsp salt 1/4 tsp pepper 375 degrees F x 20 minutes Lemon Vinaigrette 1/2 cup olive oil 1/3 cup lemon juice 1 tsp mustard 1/2 tsp salt I massaged both lacinato and curly kale in the dressing, along with 2 cups farro, then topped it with pistachios, chopped dried apricots, and chickpeas to serve. The good and the bad

This week has been yet another classic week of 2020…good news sandwiched by bad news… Some of the good news was that I made a massive bowl of my fave grain salad so my lunches were both delicious and already made. Also, we managed to escape to Lake Tahoe for the weekend. It was SUCH A MAJOR WIN for the family. Sick of oatmeal

I never thought I’d see the day, but it has arrived! My kids told me they are sick of oatmeal! [It makes sense given the frequency that they eat it] So after a week+ hiatus, filled with pancakes, waffles, eggs and banana bread, I finally came up with another option! Breakfast cake! Shhhh…don’t tell them it’s just baked oatmeal (with vanilla yogurt on top as “frosting”). I made a peaches ‘n cream flavored dish, with whole milk, honey, cinnamon and sliced peaches on top.
