Ph-ph-phases

I took a brief break from my bread and butter brekkies for some granola. Normally I make my own granola, but I got this Sun & Soil granola as a gift a while back and the mood struck. It’s a good one! The right amount of sweetness. Super nutty. GF and organic as well. It doesn’t have clusters, but that’s it’s only downfall. If you’re local, Sun & Soil does weekly deliveries to Davis (or you could go do contactless pick up in Sac. I will prob have this every day for breakfast now that… Read more >

Stuffed spaghetti squash lasagna

Warm and comforting dish coming atcha! If you haven’t roasted spaghetti squash before, you are gonna love this! Ok, so first, remove the stem of the squash then cut it in half lengthwise. Put it cut side down on a greased baking sheet/pan and roast for 30 minutes at 375 degrees F. After that you can flip it over and test it’s doneness. If the flesh pulls away from the edges in strands easily, then you are good to go. See the photo below as a point of reference (I flipped it to add marinara… Read more >

Breakfast lunch and dinner

I forgot about english muffins! Man, are they good! I started the day with an ezekiel cinnamon raisin english muffin topped in miyoko’s vegan butter almost every day this week. For lunch I had a Fall themed salad made up of leftovers, with spinach, kale, roasted sweet potatoes, roasted Brussels sprouts, dried cranberries, and rosemary flavored nuts. These are so good! I had extras on the side of the salad. They are seasonal so if you see them on the shelf at TJs grab them before they run out. That happened to me last year…. Read more >

Seasonal breakfasts

We have been changing up the breakfast game more than usual lately because the kids are kinda getting sick of all the usual suspects. Parfait bowls are a good all-in-one option for me to make in advance because I can bury his dairy dose (yogurt) in yummy toppings, store it in the fridge overnight, and then it’s ready to go in the morning as soon as they are. I love any breakfast that includes his dairy (the only other way I’ve figured out to do it is cereal w milk). To stay desensitized, he has… Read more >

Fiesta Harvest Salad

The name for this came to me because (a) it’s a party in your mouth, (b) it’s tex mex inspired and (c) it’s featuring the ingredient of the season – BUTTERNUT SQUASH! If you think pumpkin is the ingredient of the season, then that’s fine, too. You do you, boo. But I’m allll about the butternut. The dressing was a lime vinaigrette that I made up. Lime vinaigrette Ingredients: 1/4 cup olive oil 1 tbsp lime juice 1 tbsp apple cider vinegar 2 tbsp mayonnaise 2 green onions, chopped 1/8 tsp chili powder salt and… Read more >
