Ski on, ski off

Friday was an emotional rollercoaster ride.  It started off all wrong because BOTH kids were up ALL NIGHT FREAKING LONG and so I don’t think I slept more than an hour.  Every time I finished settling one kid, I’d try to go back to my bed, only to hear the other one start to cry or whine.  Kyle had an important meeting on Friday so I was trying to make sure he stayed asleep through it all, which meant I was literally running between rooms to keep them from waking up the whole family.  I… Read more >

BA times two

For dinner I made my second Bon Appetit recipe of the day.  Also shocking, was that I didn’t use the IP all day.  Oh wait, yes I did.  I had no veggie planned for the meal, but then remembered I got a 3 pack of artichokes on sale last weekend.  Perfect!  With only 20 minutes until dinner time I threw them in to steam in the magical lightning fast way that the instant pot does it. Ever since making this chicken and orzo dish, I realized it is the quintessential cozy one pan winter meal… Read more >

I’m delirious.  For some reason (slightly unknown to me) Valley monkey was up all night.  Not fussy or sick really, just wide awake and not in the mood to sleep.  I was so zonked I couldn’t even deal.  Kyle and I took turns doing I don’t even know what with her trying to get her back to sleep, but it was like someone had given her caffeine at 10 pm.  What the what?!  Girl, sleep is good.  Let’s all do it.  Hopefully it’s not a trend because I am not the kind of person who… Read more >

Salmon for me

My Monday started with a very pleasant surprise.  Valley waltzed into the childcare before my MOPS meeting and when I asked if she was ready for me to go she said yes and that was the end of it.  WHAA!?!?!  Amazing! So I celebrated with a donut.  And egg casserole and heaps of coffee and other yums. Things got even better for lunch when I made the same bomb salad from Sunday. Let me remind you…as the base, there was kale and brussels sprouts that I sautéed and then topped with a champagne vinaigrette. Then… Read more >

How I used the IP three times in one day

I have found that my Sunday prep time isn’t as much of an undertaking as it was that first Sunday of January if I keep mostly on top of it.  Making dressings when I run out, having a veggie chopping session mid week, etc, means my weekend prep is very streamlined.  That first Sunday we got back was exceptionally involved because we had just come home from being out of town so you know how the fridge looks after that.  For upcoming breakfasts, I made a batch of pancakes for the kids and bread for… Read more >
