Well the post title says it all, doesn’t it? The letter of the day was “e” and so I chose to hack up an eggplant. I was trying to make fries, but they came out a bit on the mushy side, so I feel like a phony passing them off as such. Frites they were not. All I did was chop up the eggplant into matchstick shapes (aka “fries”). Then I did a little shake ‘n bake with Lawry’s seasoning. I believe this photo accurately sums up my ghetto fabulous method. When I get behind in blogging, I tend to get overwhelmed and as a result meals fall into the undocumented abyss. It’s all coming back to me nowwwww. Hideous song. I apologize. But it’s how I feel now that I’m back at work. I love it! I can’t even tell you how awesome it feels to be nursing again. Ok this is gonna be a quickie because there’s no point in dragging it out. Seitan isn’t hard to make. It gets an unnecessarily bad difficult rap. If you’re scared to try it, don’t be. I’m a loser and I can manage, so trust me, you can too. Finding Vital Wheat Gluten is actually 75% of the battle. Try Whole Foods or your neighborhood Co-Op or health foods store. It’s 9/29! You didn’t think I’d forget National Coffee Day did you!?!? Not a chance. I’m a tad behind in blogging because I’ve been playing catch-up around the casa. I’ve been productive, but I hardly deserve a pat on the back since it’s all stuff that I should have accomplished last weekend.
