Here’s a breakdown of a few of the meals from last week. First, the personal pizzas.   The only difference between Kyle’s pizza and mine was the cheese.  His was a cheddar and parmesan mix, mine was Daiya.   I used Vicolo organic corn meal crusts.  I’ve seen them at WF forever, but this was the first time I bought them.  Totally love them.  Going to buy them again and again and again now.  I can’t stress just how in looooove Kyle and I both were with these pizzas.   FYI, Vicolo is a San… Read more >

A rough week

Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar.  In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour.  That meant I’d be at the hospital all five days of the week.  I can’t get away from the place!  Kyle was also busy with work – presentations, dinner meetings, etc.  Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them.  Instead I just figured… Read more >

MoFo recap

Since I returned to eating eggs…a while ago…I no longer consider myself vegan.  I’m basically a dairy free vegetarian.  But that doesn’t mean I don’t like vegan food.  I love it actually.  I eat it often.  And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats.  October 1: Spaghetti Squash with Marinara & Tofurky   October 2: Quinoa & Seitan with Red Almond Sauce   October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie   October… Read more >

Dinner and baby alike

Coincidentally enough… My baby is the size of a spaghetti squash.  Which was exactly what I had for dinner last night.   Oh man was this ever a fantastic meal.  I knew a spaghetti squash would kick start my motivation!  Dear Fall, Thank you. Love, Elise I roasted the squash the lazy way.  Stabbed it with a knife a few times and let it bake in the oven for ~40 minutes on 375.  Once it had cooled, I cut it open and the stringy flesh just about separated itself from the skin.  Seriously.  Not only… Read more >

A three-fer

Not meatballs. I should have made a bigger batch of these coconut macaroon things because Kyle ate half of them before I even tried one.   Work food.  Banana.  Carrots.  Macaroons. It would probably blow your mind to know how many carrots we go through in our little hippie household.  I eat half a pound a day, minimum.  If our fridge were bigger it would be packed with orange.  As it is, we have one crisper drawer solely devoted to those two pound bags (plural). Almond milk is another thing we seem to restock at… Read more >
