Easter happenings

I almost titled this post Easter “hop”penings.  Too cheesy?  I agree.  Every once in a while I’m able to deny the puns (sorry dad). The night before Easter Sunday we had some family visitors come over to see P…and bring us dinner! Salad bar 🙂 Mine was a little like a nicoise salad with green beans, red potatoes, eggs, and a vinaigrette dressing (Girard’s light champagne), but it also had chickpeas, beets, and cucumbers as well.  Best part of all was that I didn’t have to do any of the prep!  I set the table… Read more >

Touring Davis

As I alluded in the last post, we had a road trip planned for the next day in Nor Cal.  Boy oh boy are we pushing our luck with all these long car rides with an infant! But this is what he does most of the time so we are really lucky (so far).  Fingers crossed. I packed lots of food for us so we could hit the road early (basically right after we had both showered and I’d breastfed P).   Kyle and I both had similar breakfasts, but his was sandwiched between some… Read more >

Hospital, take-out, & home-made (food from the first two weeks post-partum)

The first couple of weeks have flown by.  It’s what everyone said would happen, and it is definitely the truth. The food in the hospital was okay.  [I work at the same place I gave birth to P so I know exactly where the menu and cafeteria excel and fall short] Whoever told me the first meal after birth would be the best thing I ever ate lied.  I didn’t take a photo of it, but I got two slices of french toast and a banana.  Remember how much I adore the hospital’s french toast? … Read more >

The weekender

That’s the name of the meal I ordered at brunch on Saturday.  Kyle’s parents took us to Real Food Daily, my favorite breakfast spot in Santa Monica.  I love this place so much I’ve stopped linking to it on my restaurants tab because I’ve been at least a dozen times.     My plate’s the one on the upper left. It has two (gluten free) pancakes, scrambled tofu (with onions, tomatoes, & cashew cheese), tempeh bacon, and hash browns.  Holy breakfast right? You can choose between fruit or hash browns (can’t say no to fried taters!)… Read more >

Egg and tofu wrap

At first I thought I just wanted a simple breakfast wrap. Spinach, fried egg, Rudi’s GF tortilla. But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too. It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice. It was a little bit runny, but I wasn’t too bothered by it.  Just meant more juicy goodness to wipe up with (extra) carbs afterwards. I could hardly stand it’s perfection.  I had… Read more >
