Brown rice no-tillas

Seven minute strata

I made this on a whim because I had veggies on their last legs and part of a package of tofu.  Traditionally, you make strata with eggs and cheese and you bake it in the oven (here’s my mom’s recipe for a goat cheese, mushroom and asparagus strata).  But here’s a vegan version that’s fast and microwaveable. Thai in twenty

Are you ready for the easiest meal ever? frozen stir-fry veggies + 1/4 cup water extra firm tofu 2 tbsp peanut butter 2 tbsp coconut oil Asian spice mix/Chinese five spices blend (I used 365 Asian seasoning) Add the stir-fry veggies, the water, and the spices until the veggies have thawed.  Then add the rest of the ingredients. Serve over rice.  Bam! – you’re in Bangkok – and dinner is done. 

Making a salad a meal

Oh so savory

My meals have been pretty bizarre lately so don’t say I didn’t warn you.   I have no clue how this meal was born.  It came out of nowhere and makes no sense.  At first I thought I wanted sweet oats (my normal breakfast thang).  But then I saw some leftover tofu and said to myself “why not!” I added chai tea to my oats along with half the block of tofu and mashed them all up together.
