A few days of hippie bowls

Going into the weekend I had all my meals ready to go.  Starting with Thursday night, I made a typical hippie bowl.   If I had to choose a combination of ingredients to eat forevermore it would probably be these: quinoa, carrots, corn, seitan, avocado     I recently got a question about the ratio of grain to veg to protein in my “hippie bowl” type meals.  In all honesty, I don’t consciously compose them with a specific ratio in mind, but if I had to guess I’d say it is pretty much 1:1:1.  Sometimes… Read more >

Tofu technique

I will never make tofu any other way. I promise this technique will make everyone who previously thought they didn’t like tofu change their mind. And yes, there’s a recipe at the end of this post, too. But first, the technique. 1) Press extra firm tofu until it’s bone dry.  Ok, that’s an exaggeration, it doesn’t have to be completely dry, but the longer you press it, the better your tofu will turn out. 2) Slice your tofu into slabs ~1 cm thick. 3) Coat tofu slices in all purpose flour.  [I poured 1/2 cup… Read more >

Eating in & out

This past week has been work heavy, which is why I’ve been doing more recipe posts.  But my sister hates recipe posts prefers other material (and isn’t afraid to let me know it), so here’s a recap of my weekend. Starting with Friday…    I made peanut butter. I made a spinach and pumpkin seed pate. I made bread.   I made pancakes.   I ate pancakes. I made seitan. I made tofu.   And after spending most of the day in the kitchen, Kyle and I opted for a dinner out.  We walked to… Read more >

Spicy fu

New tofu recipe!   Blackened Tofu Slabs from Bryant Terry’s Vegan Soul Kitchen.   I’ll admit I was scared by the heat, but I just went with it…   Such a success.  I’m really glad my obsession with cookbooks is good for something.  For anyone interested in buying my presents, it’s always good to go with cookbooks.  😉 The rest of dinner was as simple as it gets. Chard!   I sautéed it in olive oil and nada mas. For the record, organic produce does have it’s flaws.  You gotta scrub the bejeezus out of… Read more >

Readers request: tofu

Question: I’ve seen you prepare tofu, but it doesn’t appear you cook it and you just use it as a smear on bread or something – is it okay to do that with tofu (not cook before eating)? I am one of those weird people who thinks tofu tastes good plain.  But most people like it baked, fried, or cooked in some way.  However, to answer your question, no, you don’t need to cook tofu.  When you buy it, technically it’s already been cooked.  Tofu is made by coagulating soy milk and pressing the… Read more >
