This is a take on my previous manicotti recipe. Only better. Kyle called it the best I’ve ever made. I’d love to take all the credit, but I have a feeling the Sabra tuscan herb garden hummus played a large role too. To make the manicotti filling, I used the entire block of organic extra firm tofu, a heaping 1/2 cup of Sabra hummus, and 1/3 cup frozen spinach. I crumbled and mixed it all together with a fork (hello arm workout) until it resembled a ricotta cheese texture. Unlike last time, I opted… Read more >

I really really really wanted stuffed shells for dinner. I saw Jenna’s post when I was planning dinner, which is when the craving hit. We were already planning on having lasagna, so I had everything on hand…minus the shells. I went to 3 grocery stores. No shells. Anywhere. Ugh. After obsessing over it all day, I had no interest in anything else. Finally I found manicotti pasta. A mediocre substitute, but oh well. There were 14 shells in total, but the stuffing was only enough for 13, so now I have one random shell… Read more >

My mom got into town late Wednesday night, so on Thursday we spent the day shopping, lunching, and shopping some more. We have both been to True Food Kitchen before. I started with The Natural which is one of the most insanely non-alcoholic delicious beverages. Ever. It’s ginger, agave, and soda. Mmmm… My mom got a lemonade. For our mains, we each got our own salad and then split the TLT. I’ve gotten the kale salad (with my same tweaks – no parmesan, add baked tofu) every time I’ve gone to True… Read more >

The most massive banana ever. At the perfect state of ripeness. A work breakfast (flaxy oatmeal) that I didn’t end up eating because I got cafeteria french toast instead. GAHHHHH!!! Why can’t I quit you!!! Quinoa, roasted veggies, and nooch up the yin yang. Greens, roasted veggies, hardboiled eggs, and avocado. Again, I nooch-ed it up post-photo. Curry tofu. It’s vegan, it’s FODMAPs free, and it’s in the book. SodaStream water with lemons from the neighbors tree. Yes, I put a whole lemon in my water. And I smashed it up and drank… Read more >

Last morning in Philly! Rather than trek into Center City again, we stayed in our ‘hood for breakfast. Even though they are right next to each other, I’m not very familiar with either Penn or Drexel’s campus. Because I was in the accelerated nursing program at Drexel I spent nearly all of my time in Center City. The only occasion I had to go over to the main part of campus where the university buildings and lecture halls are was for finals (HESI exams). Blah. But I did pass through campus on my way to… Read more >
