A case of silken tofu

A reader recently discovered she wasn’t able to tolerate tofu…after ordering a case of Mori-Nu silken lite firm tofu.  So she sent them to me!!!  Thanks again Emily 🙂   They arrived slightly crushed, but I immediately got to work on cooking with them.   I had already planned on making a lasagna that day, but I’d only ever made the tofu “ricotta” with extra firm (non-silken) tofu before.  I figured I may as well give it a try with the silken kind. I used my same hummus/tofu recipe for the “ricotta”: 3 containers of… Read more >

Parties & Dates

After a long work week, Kyle and I soaked up the weekend like two sponges.  And of course, I’m only just now getting around to blogging about it.  So pathetic.  But let’s just pretend this is timely and the weekend was yesterday, okay? Starting with a Friday date night at Whole Foods.   He got off work before I did so he walked from our apt and met me there once I peaced out of the hospital.   I had salad bar ADD, but eventually got myself squared away with a monster salad – complete… Read more >

Another week, another lasagna

Pasta with tofu “ricotta” is really climbing the charts in favorite dinners.  I’m making some form of this dish every other week, at least.  Rather than manicotti, which we’ve had twice this month already, I made lasagna.   Same concept as this recipe – with hummus and tofu “cheese” and spinach layered between pasta and marinara sauce.   I made a double batch of the tofu & hummus “cheese” using two whole packages of extra-firm tofu and nearly one cup of hummus.    And I used 365 brand no-bake whole wheat lasagna noodles.   I… Read more >

New shades & raw food

Just a typical morning bowl of oatmeal. The weird part about this breakfast was how I picked around the nuts.  I don’t know why, but I wasn’t in to them this morning.  The cinnamon and maple syrup were all the topping I needed.   After breakfast I set to work on mega errands.  Our laundry needed to be done immediately (our clothes reeked of smoke from our weekend away).  On top of that we had dirty dishes, an empty fridge, a thirsty tomato plant, and much much more.  To do list, game on.  Eventually, I… Read more >

Simple vegan stir fry

Here’s quick one.  For veg lovers in a hurry. Ingredients: i bag Whole Foods frozen veggie medley (they have frozen veggies on sale right now and the combos are really yummy, mine was the four seasons blend with green beans, corn, peas & carrots) 1 block extra firm tofu, diced 1 –2 tbsp coconut oil 1/4 cup peanut flour (you could sub in peanut butter here, but you may want to thin it out with some water first) 1-2 tbsp soy sauce I sprayed the pan with non-stick spray (I’m a really big fan of… Read more >
