After a week of saving money on home-cooked meals a la plan, I opted to splurge for the weekend. Lazy me. I was working though, so it was my treat. I snacked on chex and chocolate crunchfuls. Well hello! I keep thinking it’s Sunday night because Kyle and I just got back from an overnight stay in San Juan Capistrano. We randomly decided to skip town after Kyle’s classes on Wednesday…he only has class one day a week and I didn’t have to be back at the hospital ‘til Friday, so why not? I know all the other number nerds out there appreciated the date today as much as I did. To the rest of you, happy Friday. Kyle and I got take-out from The Veggie Grill since I had a birthday coupon that was days away from expiring. Free entree, what what! Ok, I know. It’s semi-odd to be roasting winter squash in June, right? But I had a butternut and delicata squash hanging around the kitchen and figured I better seize the day. So I hacked my way into them, lubed the skin down with coconut oil, and popped ‘em in the oven at 375. I made sure to salvage the seeds to roast too.
