I’m trying to stay active in the kitchen. Proof… I made muffins. But before you pat me on the back for navigating my way out of my pregnancy laziness, you should know something. Sometimes when I work night shifts, I forget to make dinner for Kyle. I usually realize it around 5 pm – right about the time I should be packing up my stuff and heading to the hospital. This isn’t a tragedy by any means, he’s a great cook, and could certainly make a good meal for himself. How I’ve been using up juice pulp is with simple and simpler recipes. Like this quick savory breakfast fry. Quinoa & smoky tempeh strips with leftover carrot pulp (or whatever pulp you have on hand…be it kale, cucumber, etc.). Added to a pan with non-stick spray or olive oil and heated until it gets crispy. Served with a side of vitamins. Yum.
