The first couple of weeks have flown by. It’s what everyone said would happen, and it is definitely the truth. The food in the hospital was okay. [I work at the same place I gave birth to P so I know exactly where the menu and cafeteria excel and fall short] Whoever told me the first meal after birth would be the best thing I ever ate lied. Of a very pregnant (over 40 weeks and counting!) lady…on maternity leave… Wake up 4+ times throughout the night. Finally get up for good some time between 6-8 am. Drink weak tea with almond milk and maple syrup. Wonder how much longer til you can guzzle caffeine again. Make breakfast #1. A bowl of oats with nut butter & bananas. Sunday Tofu Caesar Salad Totally gonna be a regular from now on. Easy peasy and deeeelish. Monday Cabbage & Green Chickpea Curry with brown rice Kyle requested this. He wanted cabbage specifically. Turns out, cabbage is cheap. The other ingredients were things we had on hand already – including frozen green chickpeas (365 brand) and carrots. I ate two avocados today. For breakfast I had toast with avocado and a pinch of salt. For lunch I had a salad with a lot of avocado. For dinner I had a stir fry topped in avocado. I honestly couldn’t tell you which was my favorite meal. I love avocado. I don’t understand people who don’t like avocado. It makes no sense to me. When I say sticky orange tempeh, I mean it. This is sticky sweet yummy. Can you tell from the way the sauce coats the tempeh? I’m not a tempeh lover…it’s just not my fave (unless someone else – like a vegan restaurant chef – prepares it). So I was pretty surprised by how much I liked this dish. I really really liked it.
