As Kyle and I headed to dinner on the eve of September 11th, the sky was illuminated with a beam of light where the twin towers once stood. It was both eerie and inspiring and when I saw it I thought of each person who’s life changed that day. I know that this post is from last week (and therefore old news), so I won’t share my reflections on 9/11, but it was a very patriotic weekend to be in NYC. If there were a way to feel proud and somber at the same time,… Read more >

On Sunday I broke my coffee-free streak. USVAB almond milk, Wholesome Sweetener organic vanilla agave, cinnamon. Artisana makes the best nutbutter, but it also happens to be the most $$$. Once this coconut butter is gone (which will be very soon), I will be making my own only. No room in this hippie’s budget for jars of something I can make on my own for a fraction of the price. No matter how delicious and convenient it is to purchase. After digesting, I went for a short run, made shorter due to the weather. It… Read more >

While I enjoy others cooking for me, I also like making my own food because I want my meals a very specific way am a control freak change my mind multiple times while cooking. Stove-top oats are a prime example. More often than not, I have no clue where my bowl of oatmeal is heading when I start boiling water. Yesterday morning I wasn’t in the mood for anything too sweet, so I decided to make (plain) Greek yogurt my breakfast’s main ingredient. Sometimes tangy trumps sweet. After adding the yog to a bowl, I… Read more >

I hate coming home to an empty fridge (and after 12+ hours on my feet, I definitely don’t have the energy to start cooking a meal from scratch). This week’s examples: Lentils & wheat berries. [Soaking on stand-by] Veggies. [I always have greens, tomatoes, bell peppers, & carrots on… Read more >

I’ve never officially joined in on the WIAW festivities, but today’s is a special edition, so I knew I had to partake. Unfortunately, I didn’t catch all my food on film (I forgot how hard it is to remember to take pics of every. single. thing!), but I did my best, despite being out and about for much of the day. My alarm went off at 8, but I didn’t get out of bed til 9. I was reading, and loving every page, but eventually the call of coffee dragged me from the sheets. I… Read more >
