Some of these may seem lame or boring, but when you want a semi-home-made (healthy) meal lickety split, you can’t be too picky. While I mostly prep for the week in advance, I do leave some days open. You all know I’m frugal. And that I like re-working leftovers. This is not news. So when Alene & Ethel sent me home with extras from the shower, I was really excited to transform them into new dishes not have to cook for a while. Orzo salad with sun dried tomatoes. Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches. Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them. Name a vegan meal that’s more simple than an Asian stir-fry. Go on. I dare you to come up with something more basic. I’ll take it a step further. Sometimes when I work night shifts, I forget to make dinner for Kyle. I usually realize it around 5 pm – right about the time I should be packing up my stuff and heading to the hospital. This isn’t a tragedy by any means, he’s a great cook, and could certainly make a good meal for himself.
