Top two of the weekend
This is the rainbow lunch mish mash that I heaped on my plate Saturday. On the bottom is a cauliflower “pizza crust” which is topped with cabbage slaw with home-made mayo + lemon caper dressing, avocado, and nutritional yeast. Ugly as it looks, it was one of the best things I ate all weekend. But then there was this dinner. It took no time at all and was pretty awesome.
