Monday & Macaroons

Kyle and I celebrated our Valentine’s Day early.  We just used the holiday as an excuse to hit up a restaurant that’s been on our mind for a while.   Akasha is one of those places that has a menu for true foodies.  It’s based around fresh, seasonal, and local ingredients – with vegetable quinoa listed next to Niman Ranch beef burgers.  I love a diverse menu packed with yummy quality ingredients. Ok, before I get ahead of myself, I have to show you what my poor husband has to deal with on a daily… Read more >

A few days of hippie bowls

Going into the weekend I had all my meals ready to go.  Starting with Thursday night, I made a typical hippie bowl.   If I had to choose a combination of ingredients to eat forevermore it would probably be these: quinoa, carrots, corn, seitan, avocado     I recently got a question about the ratio of grain to veg to protein in my “hippie bowl” type meals.  In all honesty, I don’t consciously compose them with a specific ratio in mind, but if I had to guess I’d say it is pretty much 1:1:1.  Sometimes… Read more >

Veggie Sliders

Whenever I find a slew of tupperwared ingredients in the fridge, my mind immediately goes into overdrive, brainstorming ways to get rid of them. Beans, squash, rice, bell peppers…sounds like the base of a beautiful veggie burger to me! Veggie Sliders [yield: 10 burgers, vegan, gluten free] Ingredients: 1 cup cooked white rice 1 1/4 cup beans (I used 1 cup black eyes peas & 1/4 cup chickpeas) 1/2 cup butternut squash puree 1/2 red bell pepper, finely chopped 2 tbsp chia seeds + 1/2 cup water TJ’s 21 seasoning salute (this is my favorite… Read more >

Soup Station

This was my vision for dinner last night. Turned out pretty much exactly how I pictured it! Bonus: it was way tastier than I could have ever hoped for! The butternut squash puree is outstanding enough to stand on it’s own…add in pasta, sautéed vegan sausage, and steamed kale…oh baby!   It’s definitely worth repeating.  The reason we kept the meal’s components separate was because I wanted kale and Kyle didn’t.  He was kale-d out from the previous night’s dinner (I, on the other hand, could eat leafy greens exclusively for weeks on end…).  So… Read more >

The whole day

I had to divide this into eight (8!!) portions to grind. 16 ounces of Starbucks Christmas blend later I had grounds from wall to wall in the kitchen and my hands were permeated with the delicious aroma of java. Good thing you can’t absorb caffeine intradermally. Or can you? I just found out our apartment in Buenos Aires has a coffee maker. I’m SO looking forward to Argentinean roasts. Can you tell my one-track-mind is completely vacation focused? I still have a couple more work shifts, so I’m doing everything I can to keep my… Read more >
