How to prep for the work week

Many of you have expressed interest in a post dedicated to how I prep for the week.  I have been reluctant to do this (read: lazy) because, quite frankly, it’s a ton of work…taking pictures throughout the process would only add on extra time…and that’s not even including the posting part.  Today, however, I felt inspired.  Here’s a brief look at my process of getting things organized.  Goals: Chop raw vegetables Roast squash/potato/vegetables Make tofu/seitan Make quinoa Make Kyle something (lasagna or pasta in bulk) Miscellaneous dish (“tuna” salad, crock-pot stew, chewy oat bars, etc.)… Read more >

AM in the PM

Check out my dinner! Vegan waffles made from scratch :)  The recipe is so hearty and delicious (and also top secret), you may or may not recall why…but I’ll get back to that later.  For now, breakfast. I suppose this could be seen as a parfait of sorts. On the bottom: pumpkin oats with 1/2 cup pumpkin puree, 1/2 cup whole rolled oats, NuNaturals liquid stevia, and Tropical Traditions shredded coconut. The most wonderful time

I know you guys don’t believe me, but working on Christmas Day is not that bad.  I mean, obviously I’d prefer to spend the morning in my PJs cozied up by the fireplace, opening presents with my family.  But don’t worry, I still made sure it was a festive day at the hospital.  After all, my patients need cheer on the 25th too.  It also helps that I happen to love my job.  And in the back of my mind I know that eventually I will be higher on the totem pole and get the… Read more >

Orange you glad…

You didn’t work on Christmas Eve and Christmas Day?  I didn’t really mind it, since I got to celebrate early with my family.  On the 24th, I woke up early to sweat out a quick 20 minute Shred, which I followed up with a hearty tupperware full of overnight oats. New scheduling

Yup, it’s back to le grind.  12 hour shifts require lots of tupperwared options…and as you all know by now, I’m quite the preppy prep-ster over the weekends.  Glad my type-A ways inspired some of you to do the damn thang, too.  Left: spinach salad with roasted veg (brussels, carrots, broccoli, delicata squash) Right: quinoa with chopped pear, raisins, cinnamon & PB dressing (PB flour and almond milk) It’s a fairly simple dish, but dang am I obsessed.
