Ok, I know. It’s semi-odd to be roasting winter squash in June, right? But I had a butternut and delicata squash hanging around the kitchen and figured I better seize the day. So I hacked my way into them, lubed the skin down with coconut oil, and popped ‘em in the oven at 375. I made sure to salvage the seeds to roast too. Miracle of miracles, my breakfast held me over until my lunch break at 1 pm. That NEVER happens! I have this cute bowl to thank. :) Attune foods hooked it up at Expo West – not only did I get this on-the-go bowl (like a sippy cup for adults), but I also got to fill it with whatever cereals I wanted. I’ve been using the same plastic ones day in and day out [actually they are made from corn or some other hippie ingredient, but still, they are most definitely not meant for reuse]. Sadly, no, it’s not summer quite yet. The dog days I’m referring to aren’t the ones of sweltering heat. I’m talking about working like a dog. This recipe will fill you up and then some. It will probably leave you with a small fiber baby too. Spaghetti squash is pretty much the easiest squash to prep ever. Literally all you do is hack it open, flip it so each half is face down in a pan with an inch of water. Simple enough, right? No chopping, no peeling, no Jackie Chan knife skills required.
