Food notes

As you all well know, I pack my own food to bring to work every single day.  Some days I don’t take photos because I have leftovers that I’ve already shared (or I’m just lazy).  Sometimes I take pictures and then forget to post them, and then they pile up on my hard drive.  <— I’m pretty sure I’m eerily close to a crash. Power lunching in 5…4…3…2…and go.   Breakfast: overnight oats soaked with chia seeds, cinnamon and raisins   Snack: Marchini almonds   Not as good as regular almonds in my opinion.  They… Read more >

I’m 29

Despite feigning concern about aging, I really don’t care about sharing how old I am.  Kyle is younger (and he enjoys reminding me of it), but I am healthy and happy and have enjoyed my 20’s so there’s no reason for me to pretend that adding another candle to my cake is some big stressful occasion.  It’s a happy one! How did I celebrate my birthday?   First of all, I slept in.  Way in.  And even though I felt a bit guilty about it, I told myself I was allowed to do whatever I… Read more >

Camera purge

If there were any title more appropriate, I’d go with it, but this is really just a bunch of pics that have accumulated…and if they help give you ideas on healthy FODMAPS options, great.  If not, sorry for this post’s random nature.   Two recent recipes inspired this meal: Jenna’s veggie fried rice and Evan’s fried quinoa.  I make quinoa in bulk at the beginning of every week.  Without fail.  Some weeks I make two batches because I go through it so quickly.  I use my rice cooker, so it’s a completely mindless activity…as second… Read more >

Saturday grits

Not that you asked, but Kyle lived in the south (Hot-lanta what what) for a majority of his childhood.  He emailed me from work the other day requesting grits.  I replied asking if he liked his grits with cheese or with butter.  He responded: yes.  Ha! This isn’t the version I made him (which was not vegan).  This is, however, the version I reinvented for myself on Saturday night. I had zucchini and squash from the farmer’s market…and the vision of them sautéed in oil and vinegar on top a steaming hot bed of cheesy… Read more >

Sitting for six

After my string of night shifts, I simply wanted to sleep and veg out all day.  So that’s what I did.  I didn’t leave the apartment.  I didn’t even change out of my pajamas.    Normally I feel at least a little bit of pressure to work out, especially since I’m supposedly “training” for a triathlon.  But I didn’t.  It’s rare that I don’t have feelings of guilt for being a sloth – which is something I’m always working on.  I am a firm believer that guilt is a pointless emotion.  Being healthy means being… Read more >
