The building blocks for a delicious work lunch… Avocado and tofu. Since I make my work lunches the night before, I am usually in a rush to get to bed. Thus, tofu prep tends to be on the minimalist side. I like plain ‘fu so I don’t really care much. All I did was cut some of the block into cubes, spritz it with Bragg’s and microwave it in a glass bowl with a CoverMate cover. I didn’t come up with this salad name. I’m pretty sure that’s the handwriting of my sister circa 1992. Here’s a translation: Dressing 1/3 cup EVOO 1/3 cup vinegar (regular – as in not balsamic) 1/2 cup sugar 2 T sesame seeds 1 T white onion, finely chopped 1/4 tsp Worcestershire sauce 1/4 tsp paprika Salad 1-2 pints strawberries a whole lotta spinach 3 T almonds, slivered optional: crumbled goat cheese, avocado I retook the (below) photo three times because it looked so weird. Heat wave much? I woke up way too early on Monday because I was sweating my cojones off. I’m not so sure fall has truly arrived after this past weekend of sunshine. No complaints here! Despite the four fans and six open windows keeping the triple digit temps at bay, I still had my usual vat of coffee. Can’t fight the addiction! See?
